Summertime Eats | Veggie Pesto Pasta

Hello Foodie Fanatics!

Nobody wants to slave away in the kitchen during the hot summer months. I’m always looking for something new to try that is quick and easy. The veggies and light taste in this dish are perfect for a hot summer night. It can be used as a main dish or as a side dish for a summer party. It is vegetarian, gluten free, and takes less than 15 mins!

You will need:

1 Box of gluten free penne

1 Jar of pesto

1 Tbsp butter

Squash

Zuchinni

Mushrooms

Black olives

Corn

Start by boiling the water and chop up all of your veggies. Add the pasta when the water reaches a boil.

Add all of the veggies to a pan with 1 tbsp of butter. By the time the pasta is done the veggies will be, too.

Strain the pasta. Salt and pepper the veggies and then add them to the pasta. Add in the jar of pesto and mix until everything is coated.

Put into bowls and add a little parm cheese. (optional).

It’s so easy and delicious! 4th of July is right around the corner and this dish is perfect for the occasion!
