Baking Christmas cookies on Christmas Eve is one of my favorite traditions from childhood. As I’ve grown older, I like to bake cookies before Christmas and give them out as little gifts.
There are so many different Christmas cookies to bake, but my new favorite is the Italian wedding cookie or snowballs (a cute name for the kiddies!). These delicious and elegant looking cookies will take you less than 10 minutes to mix up and 15 minutes to bake!
You will need:
2 1/4 cups of flour
1/2 cup confectioners sugar [1 cup for rolling]
1 cup of butter
1 tablespoon vanilla extract
Pinch of salt
1/2 cup of pecans
Mix all of the ingredients,except the pecans, in a bowl until dough forms then fold in the pecans.
Roll into 1 inch balls and place on an ungreased baking sheet. Bake at 350ยฐ F for 15 minutes.
Allow the cookies to cool no more than 5 minutes. You want them to still be warm so the sugar adheres to the cookies better. Begin rolling them in a bowl of confectioners sugar until coated. Roll them in the sugar a second time.
Lay the cookies out on parchment paper until completely cooled. Store in an air tight container until you’re ready to eat or bring them to your Christmas parties! ๐

I LOVE these cookies (although I always call them by their alternate name, Russian Tea Cakes… Same thing though!) soooooooo yummy! I think I may just have to make some for a holiday party this weekend!!
