Before we get all sugared up on chocolate bunnies, lets start the day with a yummy Easter brunch! Weekend brunch is by far my favorite meal and Easter is the perfect time to showcase a delicious brunch with family. In my family, my sister is vegetarian and I am pescatarian, so I love to mix sweet and savory foods to give everyone a variety. Pancakes, cream puffs, and pastries are the perfect sweet touch while bacon, sausage and grits are great for a bit of savory.
We recently tried the new Kodiak almond poppy mix. If you are a fan of biscotti,you will LOVE these! SO good! We have been eating Kodiak cakes for the past 3 years and we love them for pancakes and waffles. Breakfast casseroles are perfect to make if you are feeding a crowd. It can be made ahead of time and popped into the oven first thing in the morning. I love flowers and pops of color to tie everything together. I found these cute rose gold forks at Target. They’re plastic, but they look so real and they are pretty sturdy. Since it is Easter, add a little dish of jelly beans!
Now onto the best part of the post, the lemon danish! Desserts are usually my specialty for any occasion and this lemon danish is no exception. I really love lemon all year round, but especially during the Spring and Summer months. I recently made this and it was gone within seconds. Its that good and SO easy to make!
Ingredients:
1 pkg of rolled pastry
1 pkg of cream cheese (room temp)
1 cup of powdered sugar
1/2 tbsp vanilla
4 tbsp of lemon curd
1. Preheat oven to 400 degrees.
2. In a bowl, mix cream cheese, powdered sugar and vanilla until creamy.
3. In a pan, roll out pastry and make slices diagonally along each side.
4. Spread a thick amount of cream cheese mixture down the middle of the pastry and then spread 4 tablespoons of lemon curd down the center on top of the cream cheese.
5. Fold the sliced pieces across the top alternating sides to give it a pretty effect.
6. Brush top of pastry with an egg wash and put into the oven for 15 minutes or until golden brown.
7. Dust with powder sugar or a glaze made of milk, powdered sugar and vanilla. Place on table and watch it disappear!
